My husband and I came across a recipe for slow-cooker potato soup a couple of weeks ago, and we finally got around to making it this past Sunday.
And it was delicious!
We used this recipe from MyRecipes.com, but with a couple of tweaks. First, my hubby isn’t a fan of onions, so I left that out and added 1 tsp. of onion powder. I also added 1 tsp. of garlic salt and, right after I stirred in the half-and-half, I added about 1 c. of shredded Cheddar cheese. We then added our own toppings, including a little extra cheese and crumbled crispy bacon (I cooked extra when I made breakfast that morning and just saved it!).
The soup was delicious, very filling and can stretch to at least two meals (for two), plus one lunch, with pretty healthy portions.
As part of my goals for the next couple of months, I am trying to cook dinner at home more often. Most of the time I want to focus on healthy, simple dishes so they’re easy to make after the workday and don’t pile on a ton of calories at night. But potato soup is one of those comfort foods that I think we all want in rotation now and then, especially when it’s cold!
